Make-ahead meal : simple meatloaf recipe for family dinner at home

 

 

If it’s 5pm and you haven’t figured out what’s for dinner, this meatloaf is NOT for you (but only because it takes an hour to bake). But if it’s 2pm you’re planning for dinner, give this simple meatloaf a try! Or even better, do a bulk cooking day on Saturday and prep this meatloaf but then keep it in the fridge and save it to bake on Sunday so you get a night off of cooking.

This is my mom’s recipe and I’ve always loved it. It is simple, comfort food – no interesting twists, no surprise ingredients – just basic meatloaf that my whole family loves. If you have a picky eater, offer ketchup or bbq sauce as a dip.

 

Three reasons I love this recipe:

  • It is SO fast to put together and can be made several days ahead of time and kept in the fridge, or weeks ahead of time and kept in the freezer.

 

  • It is a great thing for kids to help with or make completely by themselves. The trickiest part is teaching them how to properly handle raw meat. They need to understand the need to not touch other surfaces when handling the beef and to wash their hands and work space thoroughly.

 

  • This recipe is easy to mass produce and it also doubles as our go-to meatball recipe to top pasta or for meatball sandwiches. To make this into meatballs, combine all ingredients then form into meatballs the size of ping pong balls. Set on a cookie sheet and broil 6″ from heat for 5 minutes. Then flip the meatballs over and broil for 5 min on the opposite side. Drain on paper towels.

Make-ahead Meal : Simple Meatloaf

A simple, moist meatloaf recipe for home-cooked goodness. It's perfect for a beginner chef or for kids to help with in the kitchen.
Prep Time 15 minutes
Cook Time 1 hour

Ingredients
  

  • 1 pound ground beef
  • 1 egg
  • 2 tbsp dried onions
  • 1/4 cup milk
  • 1/4 cup ketchup

Instructions
 

  • Combine all ingredients into a large bowl and mix with a beater until well combined. Salt and pepper generously. Place mixture into a loaf pan.
    Bake in preheated oven at 350 for 60 min.
