Make-ahead Meal : Parmesan Chicken

 

This parmesan chicken is another make-ahead meal so you can plan and prep your dinners in advance. And honestly it’s quick enough that if you don’t plan too far in advance, you can still pull this one off. It takes under 10 minutes to prepare it and 30 minutes to bake. You will have a moist, flavorful chicken dish that can be enjoyed by all and isn’t too flavorful so even your picky eaters.

You can use frozen chicken breasts or tenderloins for this recipe, but I try to use fresh. I think it makes the prep work easier and the cooking time shorter. Of course the down-side to fresh chicken is you have to use it before it goes bad. I always buy fresh and then if my dinner plans change, I prep it for what recipe I’m going to make and then freeze it until that dinner rolls around. I usually buy chicken breasts in bulk at Sam’s.

 

Three reasons I love this Parmesan Chicken:

  • It can be made ahead (hence the title :)). I often prep my dinners hours or days ahead. I love that this can be sitting in the fridge just waiting for me to pop it in the oven.
  • It is delicious but not too overpowering so it can be paired with almost anything – veggies, salads, pastas, etc.
  • I love how simple this parmesan chicken tastes – it allows you to enjoy the chicken flavor enhanced with a few spices and cheese.

Need a quick and simple dinner idea for tonight? Try this Parmesan Chicken! It only takes about 10 minutes to prepare and 30 minutes to bake and results in a moist, flavorful chicken. It's a winner at my dinner table every time I serve it.
Prep Time 10 minutes
Cook Time 30 minutes
Servings 6

Ingredients
  

  • 3ish pounds chicken (4 large breasts or 8 tenderloins)
  • 1 cup bread crumbs
  • 1 cup parmesan
  • 1 1/2 tsp. dried parsley
  • 1 tsp. paprika
  • 1/2 cup butter (1 stick)

Instructions
 

  • Prepare the chicken. I cut off all the fat and if I'm using breasts, I cut their thickness in half so they aren't more than 1/2-3/4" thick
  • Combine bread crumbs, parmesan, parsley and paprika in a low shallow bowl
  • Melt butter in a separate low, shallow dish
  • Spray a large cookie sheet with non-stick cooking spray
  • Dip each chicken piece in butter then the parmesan mixture on both sides and place in pan
  • Bake at 350 for 30 minutes or until cooked through
