Make-ahead Meal : Beef Stroganoff

 

I’m sharing one of our family favorites that all of my kids love (and that’s saying something with six very opinionated kiddos). It’s a make-ahead meal : beef stroganoff. You can make this dinner in the morning (it’s about 20 minutes of prep) and let it cook all day in the crockpot. You can also make this dinner by letting it simmer on the stove for 2 hours but I prefer the crockpot. Don’t have a good crockpot? Try this one.

 

Or if you’re doing a bulk cooking day, it’s the perfect thing to prep ahead and then freeze. After you cook the onion, garlic and brown the steak, let the meat mixture cool. Put it in a gallon ziploc bag and put it in the freezer until a day when you need a great crockpot meal and only have 3-5 minutes to put it together (you know those kind of days, right?). And then you’ll be so happy to be prepped ahead of time. Happy cooking!

 

Make-Ahead Meal : Beef Stroganoff

Ingredients
  

  • 1.5 lbs. bottom round steak
  • 2 Tbs canola oil or olive oil
  • 1/2 cup chopped onion (or 2 Tbs. dried, minced onion)
  • 2 cloves garlic (or 1/4 tsp. garlic powder)
  • 3 cans cream of mushroom soup
  • 1 1/2 Tbs. worcestershire sauce
  • 1 cup sour cream

Instructions
 

  • 1. Cut steak into 1" squares
  • 2. Heat oil in a frying pan and cook steak until browned, adding onion and garlic
  • 3. Put cream of mushroom soup and worcestershire sauce in a crockpot. Add meat mixture from frying pan.
  • Cook on low for 5-6 hours until meat is tender. Add water to thin as needed (1/4 cup at a time).
  • Add sour cream 15 minutes before serving.
  • Serve over rice or noodles.

This meal is also easy and great to double for a crowd or to feed half to your family and take half to a friend in need.
